Salmon Patties that don't suck

I’ve made meal prepping part of my weekly routine since two months ago and these Salmon Patties that don’t suck keep popping up in the menu. They’re easy to make, require few ingredients and they’re crispy and juicy all at once.

Plus, you’ll also get plenty of omega 3s to help reduce inflammation in the body and lots of healthy fats to keep you satiated for several hours.

These Salmon Patties that don’t suck go great with a side of sauté veggies such as spinach, bell peppers, zucchini, sweet potatoes or you can even use these quinoa patties to make a yummy salmon burger. Add avocado, lettuce and sliced tomatoes, and you’re good to go!

If you choose to make them in advance, simply store them in the fridge in an airtight container. They’ll stay well for 2-3 days. And if you’re aren’t ready to enjoy these delicious patties yet, then simply freeze them. They’ll last for a couple of weeks frozen.

Salmon Patties that don’t suck

Ingredients:

  • 2 cans of wild-caught salmon 
  • 2 eggs
  • 1/4 shredded cheese.  (Preferable any type that melts). – If you rather use dairy-free cheese, I like this brand.
  • 3-4 fresh basil leaves, finely chopped
  • 1/4 garlic powder
  • Sea salt and pepper, to taste
  • 1 tbsp coconut oil

How?

  1. Drain off the liquid from each can.
  2. Mix all the ingredients in a large bowl.
  3. In a large frying pan, melt coconut oil over medium high heat. Once hot, scoop in salmon mixture and flatten with the back of the spoon. Two cans usually make 6 regular-size patties. You can make them larger or smaller. – Do whatever makes your soul happy. If you’re not a fan of coconut flavor, I’d suggest to use UNrefined coconut oil; this type doesn’t taste or smell like to coconut.
  4. Enjoy these salmon patties over a salad, with a side of sauté/roasted veggies or make a gluten-free salmon burger using these quinoa patties.
